I just got back from the East Coast! My best friend Diana got married in Charlottetown, PEI. AWWW!!! While I was visiting Charlottetown I ate a delicious seafood dip and I can’t stop thinking about it. I decided to recreate a version of it using canned crab. Gross, right? Nope, not at all. Canned crab is about $3-$4 depending on the brand and it’s an easy way to fancy-up a dish.
In a casserole dish I mixed 1 can of crab, ½ cup plain yogurt, juice of half a lemon, spoonful or 2 of mayo, half a red pepper(finely chopped), 1 chopped green onion, dash of worcestershire, generous amount of hot sauce(choose your fave!), parsley flakes, feta, grated cheddar(just a bit) and salt and pepper. Mix this all together, top with panko bread crumbs and bake at 350 for 20 minutes or until bubbly and brown. If the top looks pale and stupid, put it under the broiler for a hot minute. Serve with veggies, pita, crackers or whatever cruditee ya want! It was SO good. Normally I wouldn’t eat crab dip for dinner, but it was so yummy that I had to. This would be a great dip to bring to a party. Everyone loves a hot dip.
